Valentine's Dinner
Our Valentine's Day dinner was the highlight of our stay, a truly magical experience at the License to Chill Bar & Grill. With its floor-to-ceiling windows and outdoor terrace, the restaurant offers panoramic views of the resort's lush lagoon, water park, and the picturesque lake. The ambiance was perfect, with every detail thoughtfully curated for the occasion. Heart-shaped straws and napkins added a touch of whimsy, while the live guitarist, Wayne, serenaded us with classic love songs, transporting us back to Valentine's Days past.
We started our culinary journey with some fantastic cocktails. The License to Chill Margarita, with its Margaritaville Silver Tequila and just the right amount of blue Curacao, was a refreshing and flavorful choice. Mike raved about his Bruschetta, particularly the incredible bread and the perfectly fresh tomato topping. My Caribbean Lobster Bisque was a revelation – rich, creamy, and brimming with sweet lobster chunks. The highlight was the delicate corn fritter, a delightful surprise that complemented the bisque beautifully.
For our main courses, Mike opted for the Grilled Duroc Pork Chop, declaring it incredibly tender and perfectly paired with its flavorful BBQ sauce. I chose the Prime Center Cut New York Strip, cooked medium-rare, and was thrilled with the delicious crust and melt-in-your-mouth interior. It was a steak lover's dream.
We couldn't resist indulging in dessert, and we're so glad we did. Both the chocolate lava cake and the Grand Marnier soufflé were divine, the perfect sweet ending to a perfect meal. We shared both, savoring every last bite.
Parrot Island Mini Golf
The next day, Saturday, we were eager to explore the Margaritaville grounds. We were ready for some daytime fun. We grabbed our putters and balls and headed straight for the mini-golf course, ready for a friendly, albeit competitive, game. Let's just say my golf skills could definitely use some work. While Mike might have been practicing his swing a little more often than I have, we both had a blast navigating the course's quirky obstacles and enjoying the beautiful scenery.
Refueling After My "Defeat"
My crushing defeat at Parrot Island Mini Golf left me in dire need of some consolation, so we headed over to the LandShark Bar & Grill for lunch. We decided to sample their wings, ordering both the Garlic Parmesan and the Caribbean Jerk varieties. I have to confess, the Garlic Parmesan wings had a surprising and delightful twist – they tasted remarkably like Cuban lechón asado! It was an unexpected and delicious flavor profile. Chef Mijaylov Garcia even stopped by our table to check on us and see how we were enjoying the wings.
As wonderful as the wings were, the true star of our lunch at LandShark was, without a doubt, the Key Lime Pie. You know how every slice of Key Lime Pie comes with a lime wedge? Well, for some reason, I had the brilliant idea to squeeze the entire lime wedge all over our slice. What happened next was… well, it was beyond words. The tartness of the fresh lime juice combined with the sweet and tangy Key Lime filling created an explosion of flavor that was absolutely transcendent. It was like unlocking a hidden level of deliciousness. It wasn't just good; it was an epiphany. I'll never eat Key Lime Pie any other way again.
A VIP Night of Side-Splitting Comedy
As the sun dipped below the horizon, our evening took a hilarious turn at the newly unveiled Margaritaville Comedy Club, nestled within the Boathouse Bar & Lounge. This wasn't just your average hotel entertainment; it was a curated experience designed to bring a touch of sophisticated fun to the laid-back Margaritaville vibe. With our VIP status, we secured prime, front-row seats, putting us right in the heart of the action. The stage came alive with the comedic talents of John Wessling, Barry Laminack, and Brenda Pontiff. Each comedian brought their unique style, delivering punchlines that resonated with the audience and created an atmosphere of pure, unadulterated laughter. The energy in the room was infectious, a perfect blend of relaxed elegance and side-splitting humor. The Margaritaville Comedy Club proved to be more than just a venue; it was a highlight of our stay, a testament to the resort's commitment to providing diverse and memorable experiences.
